To celebrate the Australian Apple Season kicking off we have put together a super simple yet delicious apple juice recipe for you to make in your MOD Cold Press Juicer.

The leftover pulp can be then used to make these healthy, fluffy apple muffins which are a great addition to a kids lunch box or a mid morning treat with a cup of tea or coffee. They even will make a great on-the-run breakfast option. 

The Australian Apple Season means that a wide range of juicy red apples are perfectly sweet and any of your favourite varieties will work great in this. 

Apple Juice with a Twist
Serves 2 

Ingredients:

5 medium, red apples, chopped into chunks
1/2 lemon, peeled
A knob of ginger, size depending on preference
3 small sized carrots 

Method:

Process all the apples through the juicer and then set the pulp aside before juicing the rest of the ingredients. 

Process the remaining ingredients, adjusting the flavours to suit individual preferences. 

Divide juice between two glasses and enjoy over ice!

Use the apple pulp in the below recipe! If you dont have enough pulp from the apples to make a full 2 cups, simply top up the cup by adding in some grated apple.

Ingredients

  • 2 cups whole wheat flour 

                            
  • 2 tsp baking soda

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1 tsp salt

  • 3 large eggs, at room temperature

  • 2/3 cup pure maple syrup

  • 1/3 cup coconut oil, melted

  • 1/3 cup applesauce, unsweetened, at room temperature

  • 2 tsp vanilla extract

  • 2 cups apple pulp

  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 220 degrees celcius and line a muffin tin with cupcake liners;

  2. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon and salt;

  3. In a separate larger bowl, whisk together eggs, maple syrup, coconut oil, applesauce and vanilla extract;

  4. Pour the dry ingredients into the wet and slowly fold together;

  5. Just before it is all combined, add in the apple pulp and walnuts. Stir until just combined. Divide the batter between the muffin wells, allowing room for expansion;

  6. Pop in the preheated oven for 5 minutes then decrease the temperature to 180 degrees and bake for 12-18 minutes.  Bake until an inserted toothpick comes out clean;

  7. Allow to cool slightly before removing from the muffin tin. Cool completely on a wire rack.
