To make vegan ice cream you simply need to substitute traditional dairy cream with a plant-based alternative. We suggest using full fat coconut milk to achieve a rich thick texture, most similar to traditional ice cream.

Is coconut milk healthy?
A delicious dairy alternative, coconut milk offers a slew of health benefits. It contains medium-chain fatty acids, a healthy fat source. It is important to note that all fats, even the healthiest ones, are highly caloric and shouldn't be consumed in excess.
1/3 cup of full fat coconut cream (cooled in the fridge for min 8 hours)
1/4 cup of pure maple syrup
3 tbsp of agave nectar or honey
2 tsp of peppermint extract
1/4 tsp of salt
3/4 cup of plant-based milk (coconut, soy, cashew oat or almond)
6 candy canes
10-15 drops of red food coloring (optional)
Ice cube tray
Directions
Drain and rinse the soaked cashews. Add to your MOD Blend Pro.
Add all other ingredients other than candy canes to the blender. Use the slider function to blend, starting on low and moving up to medium as needed. Use the tamper and add slightly more coconut cream if needed. Mix just until thick but well combined.
Unwrap the candy canes and place in a plastic or silicone bag. Use a small hammer or rolling pin to break them up until small pieces. Pour into the blender mixture.
Using a spatula, roughly mix the candy cane pieces in with the ice cream batter.
Scoop out your blended mixture and pour into an ice cube tray. Freeze for 8 hours or overnight.
When you're ready to serve the ice cream, pop the mixture out of ice cube tray and pour it back into your MOD Blend Pro. Add a splash more plant-based milk and blend using the ice cream preset function.
Serve in your favourite bowl and top with extra candyman pieces!
