Beat those winter blues with this vibrant green soup. With just a handful of ingredients, this soup is easy to whip up and not only will it warm your soul, it will fill you with a range of important vitamins and minerals.
One of the great things about this recipe is that it is super versatile too! Any green vegetable will work so feel free to experiment. I have made this countless times and very rarely do I measure ingredients. I love adding the miso paste - you can use white or brown, both will had a complexity to the flavour which elevates the dish.
For those not familiar with miso paste, it is made by fermenting soybeans. It is rich in a range of essential minerals and a great source of various B vitamins as well as vitamin E, K and folic acid. Due to it being fermented, it contains beneficial bacteria which is great for the gut which will help you stay healthy during the flu season.
Chilli flakes, parmesan and buttered sourdough, to serve.
Directions
Place a large pan over medium head and add in the onion and garlic. Cook for 5 minutes or until soft.
Add in the leak, zucchini, broccoli and peas. Stir and cook for another 5 minutes until the veggies are softened.
Next, add in the stock and miso paste. Stir again and cook for 15-20 minutes, stirring occassionally.
Allow the soup to cool slightly and then carefully pour the soup into your MOD Blend Pro and blend until smooth.
Once blended, pour back into the pan over a medium heat and season to taste with salt and pepper. Adjust the consistency to suit, adding more stock for a runnier soup or reducing down for a thicker soup.
Sprinkle over chilli flakes and grated parmesan cheese and served with buttered sourdough or other good quality bread.
