Oat Cookies Using Leftover Pulp
These cookies are delicious, healthy and super easy.
They are refined sugar free and made with whole, nourishing ingredients.
Even better? They are a fun and simple way to use up whatever pulp you have leftover from juicing.

Oat Cookies | MOD Appliances
90g juicer pulp (apple, kiwi fruit, zucchini, orange, pear, ginger or a combination)
100g wholemeal flour
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla essence
100ml honey or maple syrup
3 TBSP melted coconut oil or butter
Preheat oven to 170C and line a cookie tray with baking paper.
Blend or process the pulp into a smooth paste and set aside.
In a large bowl, mix together the oats, flour, baking powder, cinnamon, vanilla, honey, egg, coconut oil or butter and the pulp.
Once combined, divide into 10 equal sized cookies. Bake for 15-20 minutes.
