Using MOD Blend Pro means this recipe is incredibly easy and takes only a few minutes to throw together.
This recipe is naturally gluten free and refined sugar free. It can also become dairy free or vegan friendly by using coconut yoghurt or another thick, plant based yoghurt in replace of the Greek yoghurt.
The base of these cookie dough balls is buckwheat flour and almond meal.
Buckwheat flour has become increasingly popular and is now available at most (if not all) supermarkets. Buckwheat is incredibly rich in fibre, which promotes regular bowel movements, protects your digestive system and help controls blood sugar levels.
Almonds are one of the best sources of vitamin E. Increased vitamin E intake has been linked to a range of health benefits including lowering the rate of heart disease, cancer and Alzheimer's disease.
These are seriously moreish so be careful - the batch wont last you long!
Cookie Dough Raw Balls | MOD Appliances
Ingredients
2/3 cups almond meal
1 cup buckwheat flour
5 medjool dates, pitted
2 TBSP natural unsweetened Greek yoghurt or thick coconut yoghurt
2 TBSP almond butter
2 TBSP rice malt syrup, date syrup or maple syrup
3 TBSP melted coconut oil
1 TBSP pure vanilla extract
Pinch of sea salt
50 grams of dark chocolate chips (vegan if required)
Directions
Add the almond meal, buckwheat flour and dates to your MOD Blend Pro and blend until the dates have completely broken down and the flour mixture has darkened.
Turn the blender off and add in all the remaining ingredients except for the dark chocolate chips.
Blend again until a smooth dough is formed. Transfer to a bowl and using hands, knead in the chocolate chips.
Using a tablespoon measurement, mould into balls. Store balls in a container in the freezer.
