The Easter long weekend makes me think of two things. The first, of course, being chocolate. The second thing it makes me think of is carrots!
With everyone donning bunny ears and discussing where the easter bunny has stashed the eggs, why not hunt around for the hidden treasure in your backyard with a glass of homemade cold pressed juice in hand?
Carrots are a powerhouse vegetable that will help your body cut through the increased intake of sugar. They are loaded with vitamin A and beta-carotene which can lower your risk of diabetes while the calcium and vitamin K can strengthen and maintain good overall bone health.

4 - 5 small - medium carrots
1 medium red apple, cut into quarters
1 knob of ginger, size depends on taste preference
1 small lemon, peeled & halved

Slowly feed the produce down the chute;
Serve the juice with a couple of ice cubes.
