Is there anything more delectable than a slice of rich chocolate cake? Here at MOD, we think not. And while there is no harm (and it is, in fact, good for you!) to indulge once in a while, wouldn't it be great if you could have your cake and eat it too?! Introducing MOD's healthy chocolate loaf cake. So yummy you won't believe it contains superfoods like avocado, making it the perfect crowd pleasing, but clean, dessert. What's even better about this cake is that you can throw all the ingredients in the blender, so you can put it all together in no time!

Healthy Chocolate Loaf Cake

Ingredients

  • 1/2 small avocado, chopped

  • 1 egg

  • 2 teaspoons of vanilla extract

  • 2 large or 3 small bananas, roughly chopped

  • 2 cups wholemeal plain flour

  • 1/2 cup of milk or milk alternative (add more or less as required to combine ingredients)

  • 1/2 cup cocoa powder

  • 1 cup sugar

  • 2 teaspoons of baking powder

  • 1/4 teaspoon salt

  • 2/3 cup dark chocolate chips

  • Half a cup of mini chocolate chips for topping the cake

Directions

  1. Pre-heat oven to 180 degrees celsius.

  2. Add avocado, banana, egg, and vanilla extract to your blender (MOD Blend Pro is perfect for this).

  3. Blend on medium power until smooth (roughly 30 seconds).

  4. Add flour, milk, cocoa, sugar, salt, and baking soda to the avocado mixture, blend on medium again for around one minute until combined and smooth. 

  5. Use your blender tamper to incorporate ingredients.

  6. Add the dark chocolate chips to the mixture, stirring with your blender tamper to combine. No need to blend.

  7. Grease and line a loaf pan (9x7inch), before pouring the cake mixture into the pan. Use a spatula to scrape out every tasty morsel of batter!

  8. Sprinkle the top of the cake with the mini chocolate chips before placing it in the oven.

  9. Bake for approximately 45 minutes, checking after 40 minutes with a toothpick to see if it is ready.

  10. Let cool. Slice and enjoy!
