Moroccan Spinach, Carrot & Chickpea Salad
This is a simple salad to throw together that makes a great option for lunch or dinner. It will pair great with any protein such as chicken, lamb, beef, tofu or tempeh.

2 small carrots, grated
One handful of baby spinach, chopped roughly
1/2 can of chickpeas, drained
1 large cube of goats cheese
Half a lemon, squeezed
1 tsp moroccan spice mix
Dash of extra virgin olive oil
Salt and pepper to taste
Simply combine all ingredients in a salad bowl and serve fresh!
