Moroccan Veggie Patties
These little fritters are so versatile.
They are a great way to use up leftover pulp and any spice mix can be added to them.
They also freeze great - simply, mix all the ingredients together, mould into patties and then freeze individually. When you are needing a last minute lunch or dinner, simply defrost in the microwave for 30 seconds and then cook on a pan until golden and cooked through.
These are great served as part of a leafy salad or in between burger buns with some sweet chilli sauce, mayo, lettice, sliced tomato and beetroot, avocado smash and crumbled feta cheese. Yum!

Ingredients
Leftover pulp from our Spinach, Carrot & Lemon Juice (roughly 1 1/2 cups)
2 eggs
1/2 cup breadcrumbs
1/2 can chickpeas, drained and mashed
1 tsp moroccan spice mix
1/2 tsp each garlic powder and chilli flakes
Salt & pepper to taste
Olive oil, for frying
Directions
Combine all ingredients except the oil and sweet chilli sauce;
Shape into patties. Place in the fridge for minimum 30 minutes to firm up;
Heat oil in a fry pan and cook patties until golden on both sides.
