We've got the perfect halloween breakfast recipe for the young & young at heart. These pumpkin spice pancakes are vegan-friendly, gluten-free and full of flavour.

Incase you don't have pumpkin pie spice on hand you can make your own by mixing equal parts cinnamon, nutmeg and ginger. This recipe also calls for oat flour, which you can easily make yourself by blending rolled oats in your MOD Blend Pro!

Spooky Pumpkin Spice Pancakes

Ingredients

    • 1 cup of oat flour (you can make this yourself just by blending up rolled oats in your MOD Blend Pro!)

    • 1/2 cup pure pumpkin purée

    • 1 tbsp baking powder

    • 1 tbsp pumpkin pie spice (or make your own using 1 tsp of nutmeg, cinnamon and ginger)

    • 1 tbsp maple syrup

    • 1.25 cups plant milk

    • 1 tbsp coconut oil

    • 1/3 cup vegan yogurt

    • 1/2 scoop vanilla protein powder

    • 1 apple chopped

    • 1/2 tbsp of coconut oil

    • 1/4 tsp of cinnamon

    • 1 tbsp of water

    • 1 tsp maple syrup

    • 1/8 tsp of vanilla extract

    • 1 pinch of sea salt

    Directions

    1. Blend all ingredients using the slider. Blend for 1-2 minutes or until well combined. Let the mixture sit for a few minutes.

    2. Add a small amount of coconut oil to a pan. Melt over medium heat. Add more as needed.

    3. Pour your batter in the pan, making your pancakes as small or large as you like. Fry and flip until golden on both sides.

    1. Cut up your apple into bite sized pieces.

    2. Place apple in a saucepan with 1 tbsp of water.

    3. Cover the pan and cook over medium heat for about 5 minutes, stirring occasionally. Continue until the apple pieces become very soft.

    4. Add maple syrup, cinnamon, salt and vanilla. Stir until well mixed.

    5. Cook for up to 5 more minutes until apples are soft and coated. Remove from heat.

    1. In a small bowl combine vegan yogurt and protein powder. Mix until it forms a thick icing-like consistency.
