Ingredients

2 large zucchinis, sliced lengthways

1 large hard green pear, cut into chunks

10g -15g fresh ginger, more or less to taste

1/2 lemon or lime (I used 1/4 medium lime and 1/4 large lemon as this was what I had on hand)

3x big handfuls spinach (or any other leafy green will also work)

2-3 small handfuls of mint leaves & stalks
Directions
Wash and prepare all the ingredients and set up your MOD Cold Press (for detailed instructions, refer to your Juicing Handbook);
Start by juicing the zucchini. Once you have processed all the zucchini through the juicer, turn the machine off and scoop out the pulp into a separate bowl or container. Set this aside. See our recipe suggestions in the recipe notes below!
Turn the machine back on and continue feeding the rest of your produce through the chute;
Turn the machine off, give the juice a stir and a taste. Adjust any of the flavours to your personal preference;
Place a couple of ice cubes in a glass, pour over juice and enjoy!
Recipe Note
Leftover zucchini pulp can be used in so many ways!
Here are a few of our suggestions:
1. Turn into muffins. Our recipe calls for 1 cup of leftover pulp and a range of different pulp can be used. Leftover zucchini pulp (and also the pulp from the pear used in this juice is a great option). Get the recipe here!
2. Make a zucchini loaf.
3. Add into your morning porridge to help bulk out your breakfast.
Tip: If you are not using your pulp straight away, transfer the pulp to an ice cube tray, place into the freezer until solid and then pop the zucchini cubes into a labelled snaplock bag and store in the freezer until ready to use.
