We noticed there's a bit of a craze around Zucchini juice lately, and we're not surprised. They are super versatile, they go perfectly in sweet and savoury dishes and come jam-packed with health benefits.
They are an awesome source of potassium helping to regulate your blood pressure, they have an abundance of Vitamin B that will help boost your energy levels, improve cognitive function and elevate mood.
Make the below recipe in your MOD Cold Press Juicer and you’ll have a glass of liquid sunshine guaranteed to improve your day. As an added bonus, separate out the zucchini pulp and we will show you how to turn the pulp into something extra delicious.
- 2 large zucchinis
- 1 large hard green pear
- 10g -15g peeled ginger (peeled using the back of a teaspoon)
- 1/2 lemon or lime (I used 1/4 medium lime and 1/4 large lemon as this was what I had on hand)
- 3x big handfuls spinach (or any other leafy green will also work)
- 2-3 small handfuls of mint leaves & stalks
First things first, prep all your ingredients so they are all ready to go. So, chop your zucchinis, slice your pear into wedges and cut away the skin of your lemon or lime.
Next, set up your MOD Cold Press Juicer.
Start by juicing the zucchini. Once you have processed all the zucchini through the juicer, turn the machine off and scoop out the pulp into a separate bowl or container. Set this aside for future use (see a few recipes below!).
Turn the machine back on and continue feeding the rest of your produce through the wide mouth juicer.
Turn the machine off, give the juice a swirl and a taste. Adjust any of the flavours to your personal preference.
Place a couple of ice cubes in a glass, pour over juice and enjoy!
Note this makes approximately 500ml of juice.
Tip: If you are not using your pulp straight away, transfer the pulp to an ice cube tray, place into the freezer until solid and then pop the zucchini cubes into a labelled snaplock bag and store in the freezer until ready to use.
