Healthy, money-saving recipe ideas

A huge amount has changed in the world since our last blog post. At the time of writing, the COVID-19 pandemic is reaching a crisis point across the globe. Many are now living in isolation, with most countries adopting social distancing measures to help decrease infection rates. 

Staying at home is indeed one of the most important things we can all do now. Unless we have a job that we need to leave the house for, this means we really need to limit our time outside the house to essential visits for medical supplies, for medical assistance or for groceries.  

But even attempting grocery shopping has become a fraught exercise, hasn't it? There's not always much left on the shelves. It has really made us all become so much more conscious about what we do buy, how long it will last and the need to avoid waste at all costs.

On the subject of costs, money-saving has never been important right now too, so avoiding purchasing processed or fast food and sticking with affordable whole foods is a very sensible way to shop.

Today we bring you a few recipe ideas for how you can really make the most of your produce using our MOD Cold Press Juicer.

It's not true that juicing has to be wasteful. In fact, it can be a great way to use up weary produce. That soggy peach may not be great eaten as-is, but is just perfect in your juice. The same goes for any piece of fruit or veg that is looking a little tired (not moldy, obviously, that one can go in the compost!) What's more, the leftover pulp from your juice can be reused in tasty, fiber-rich recipes!

Presenting carrot and spinach, three ways! (Salad, Juice and Veggie Patties)

You will need: 

  • 5 medium carrots
  • two handfuls of baby spinach
  • one lemon
  • one small can of chickpeas
  • ground cumin
  • other seasonings to taste (dried garlic and dried chili are examples)
  • one egg or equivalent egg substitute
  • half a cup of breadcrumbs
  • salt and pepper

(SERVES 1: makes enough for one large serve of each recipe. Increase for more servings as needed).

Recipe 1: Morrocan Spinach, Carrot and Chickpea Salad

  • 2 carrots, grated (set the remaining 3 carrots aside) 
  • One handful of baby spinach, chopped roughly (set aside the remaining one cup of spinach)
  • Small can of drained chickpeas
  • Half a lemon, squeezed (set aside the other half)
  • Ground cumin
  • Salt and pepper to taste
  • Dash of olive oil

Method: Combine all ingredients into a large bowl, toss and serve. Yummy! 

Recipe 2: Spinach, Carrot and Lemon Cold Pressed Juice

  • 3 carrots
  • One handful of baby spinach
  • Half a lemon
  • Any other produce you wish to use up

Method: Wash all produce and chop carrots into smaller pieces if large. Place produce one by one into your MOD Cold Press Juicer. Enjoy!

Recipe 3: Veggie Patties

  • Leftover juice pulp
  • One egg or equivalent egg substitute
  • Half cup of breadcrumbs
  • Salt and pepper to taste
  • Dash of olive oil
  • Other herbs and seasonings to taste (dried garlic or chili are great!)
  • Sweet chili sauce to dip (or any other dipping sauce that you fancy!)


  • Combine all ingredients and shape into small burger-like rounds (around 3-4 cm in diameter)
  • Heat a pan with olive oil
  • Carefully place your veggie patties on a medium heat
  • Cook through for 2-3 minutes each side, turning very carefully once.
  • Serve! Perfect with some of your leftover salad!

There you have it! Simple, whole food ingredients not only boost our general wellbeing by delivering much-needed nutrients - they are also much more affordable at this tricky time. With a little creativity, you can reuse and repurpose much of what we have traditionally thrown out.
