Carrot, Apple & Zucchini Pulp Muffins

At MOD we are always finding ways to promote zero waste with our recipes! When making cold press juice there tends to be a lot of pulp leftover so instead of tossing it in the trash, how about adding it to a delicious muffin mix? To help, we have put together a super easy recipe to follow. We used a combination of green apple, zucchini and carrot in this recipe but you can use play around depending on what you have been juicing. Some of our other favourites to use are red apples, pears, beetroot, spinach or pineapple.  Makes 16 standard muffins!

If there's one thing we love during the warmer months of Australia, it is the delicious summer fruits. What better way to cool yourself and the family down than by turning them into a light and refreshing sorbet.  One of our all time favourite fruit to use is watermelon!
